Wassailing, the traditional Olde English Twelfth Night custom to sing and drink to the health of highly symbolic Apple trees, is done to drive away evil spirits from the village's Apple orchards and to ensure a good harvest of cider apples for next year's harvest.
As a beverage associated with Yule, Wassail (also called Hot Toddy) is a mulled ale, punch, wine or fruit juice made with sugar, cinnamon, ginger, fruits, honey, allspice and nutmeg, and traditionally often topped with slices of toast (as sops).
Wassail also refers to the salute 'Waes Hail', the term itself is a contraction of the Middle English phrase wæs hæil, meaning literally 'good health' or 'be you healthy'.
